In the southern coastal region of Bangladesh, the island district of Bhola is home to a unique and deeply rooted culinary tradition. For over two centuries, local communities have produced a special type of yogurt known as raw buffalo milk curd, or kancha mohisher doi. Because Bhola is surrounded by vast rivers, its scattered riverine islands provide plenty of green pastures. This natural grazing space makes the area an ideal place for rearing large herds of buffaloes. Recently recognized as an official Geographical Indication (GI) product, this traditional curd is a daily staple for the islanders and a highly sought-after cultural treat across the country. The process of making this curd is completely different from how standard dairy yogurt is prepared.
Most commercial yogurts require heating the milk and adding a starter culture from an older batch. In Bhola, local curd makers completely skip both of these conventional steps. Fresh, raw buffalo milk is simply filtered after milking and poured directly into wide, traditional clay pots. Because the local buffalo milk naturally contains a very high percentage of fat, it congeals entirely on its own. The filled clay pots are left to rest at normal room temperature for about 18 to 20 hours. As the hours pass, the thick, unboiled milk naturally sets into a dense, creamy curd with a firm texture similar to soft cottage cheese. When you taste this raw buffalo curd, the first thing you notice is its strong, refreshing tartness.
It does not have the mild sweetness commonly found in factory-made yogurts. Because of its naturally sour flavor profile, it is rarely eaten plain. Instead, local people prefer to mix it with crunchy puffed rice, soft flattened rice, or plain boiled white rice. They usually add a generous amount of sugar or rich winter molasses to perfectly balance the sharp flavor. This simple combination creates a highly nutritious, cooling meal that provides instant relief during intensely hot summer days. The high fat content of the milk also gives the meal a rich, buttery finish.
